Sweet Potato Brownies

Everybody loves a brownie, especially when they can be enjoyed guilt free! This is our favourite recipe, using cacao, maple syrup and coconut flour instead of sugar, chocolate and wheat flour, and add all the delicious goodness from a sweet potato, really you can't go wrong!


1 medium sweet potato (2-3 cups when grated)

2 whole free range eggs

2 teaspoons real vanilla extract

1/3 cup maple syrup

1/2 cup melted coconut oil

1/2 cup cacao powder

1 tsp baking powder (aluminium free)

2 tbs coconut flour


Preheat oven to 180 °C.

Mix together the grated sweet potato, eggs, vanilla and maple syrup into a large bowl.

Add cacao and baking powder until combined. Add 1tbs at a time of the coconut oil, making sure it doesn't make the mixture too dry.

Pour mixture into a lined square baking tin and cook for 25-30mins.

Remove from the tin and allow to rest for 10mins before slicing.

Sprinkle with seeds, nuts or coconut.

You can store in an airtight container, if they make it off the kitchen bench!
