Tahini Cookies

These cookies are officially Joel's favourite snack! They're deliciously 'moreish', chewy with added crunch from the sesame seeds, and of course, guilt free!


2 cups Almond Meal

3/4 cup Tahini

1/2 cup maple syrup

1/2 tsp sea salt flakes

1/2 tsp real vanilla extract

1/2 tsp baking soda (aluminium free)

2 tbs hemp flour

1/4 cup sesame seeds

Preheat oven to 170c and line a cookie tray with baking paper.

Place tahini, maple syrup, salt and vanilla in a saucepan on medium heat. Stir constantly until smooth and blended.

Remove from heat and allow to cool.

Add almond meal, hemp flour and baking soda to the cooled tahini and mix into a dough.

Roll into balls of roughly 1tbs of mixture, flatten slightly into a cookie shape on the baking paper, and press in a sprinkle of sesame seeds.

Bake in oven for 10 minutes, then switch the oven off and leave the cookies to brown for another 5 minutes.

Transfer to a cooling rack until cooled, then enjoy!
